The Book of Sent Soví is the oldest preserved recipe book in the Catalan language. It is therefore located right at the beginning of the country's culinary tradition, and there are already certain constants that have reached this day. Its influence can be seen in the rest of medieval and even later cookbooks. This condition of an inaugural book, partly accidental, does not contradict the fact that it is, at the same time, a synthesis of the cuisine of its time. Specifically haute cuisine, typical of the nobility and the wealthy classes. To facilitate access to the text, the medieval version adapted to modern Catalan is offered. This volume marks the beginning of the Seven Portes de Receptaris Històrics de Cuina Catalana collection, which will propose a long journey from the oldest recipes to those from the second half of the 20th century, with the aim of highlighting the evolution, the transformations and continuities of Catalan cuisine.
