“Avisos i instruccions per lo principiant cuiner” is the sixth volume of the "La Col·lecció 7 Portes de Receptaris Històrics de Cuina Catalana". It was written in the middle of the 18th century and is intended to explain how the food of the Franciscan communities was in modern times. It is for this reason that it reproduces a simple cuisine with dishes that come from the popular Catalan gastronomic tradition and in several aspects, it is close to the popular cuisine of the time, adapting to the customs and needs of the order.
