In the Franciscan convents, the position of cook fell to one of its members, who had to prepare them to feed the community as a whole. It is not surprising, then, that we have preserved up to eleven handwritten copies, some incomplete, of the Notices and instructions for the novice cook. It is an anonymous, quite extensive cookbook, written in the middle of the 18th century. Some of the copies are from the beginning of the 19th century, which highlights the usefulness and validity of the book. The work reproduces a simple cuisine, although not rigorous, with dishes that come from the popular Catalan gastronomic tradition, adapted to the customs and needs of the order.
That is why, in several aspects, it allows us to approach the popular cuisine of the time.
After the important and rich medieval gastronomic tradition, in the modern era recipes written in the Catalan language must be found in the convent kitchen. The Notices... is one of the oldest that we have preserved. In between we must place the Carthusian consumer books, in which, alongside other information, there were also recipes and food instructions. The Franciscan recipe, on the other hand, focuses strictly on culinary content.
