The "Llibre d'aparellar de menjar" is an extensive cookbook, written and compiled around the middle of the 14th century. This is a recipe that, until now, had remained inaccessible to the general public. His recipes reflect the tastes of the well-to-do classes of the late Catalan Middle Ages, while at the same time constituting a synthesis of medieval gastronomic literature and a basic piece of the Catalan culinary tradition, which is projected to the present day. It contains 279 recipes whose main elements are poultry and other grilled animals accompanied by sauces.
